Very true. But what if you stop searching and she does not?..
If you're dating (I mean more than couple of dates), she knows you'd like to keep seeing her and she hasn't stop searching, then she doesn't see you as the one. It could be a good time to ask her why she hasn't stopped.
Maybe she needs more time. It's ok. I'd give it a month of dating. If she's still looking elsewhere after a month, it's a time to cut your loses.

P.S. Here's why I said "more than couple of dates". Unless we are talking about something casual, there are a few compatibility questions to be answered, and until they are, it's all just intuitive guessing.
